Our Process - Shrimp Processing

Carson and Company's domestic shrimp procurement covers the waters of the Gulf of Mexico and the Atlantic.

We source Wild Caught shrimp from:
-  Pamlico Sound 
-  North Carolina to Cape Canaveral, Florida 
-  Cedar Key, Florida to Brownsville, Texas. 

Our shrimp doesn't just sit dockside. It is quickly transported by our own fleet of Peterbilt tractors and refrigerated trailers to our processing plant in Bon Secour, Alabama. Our long-standing and strong relationships with dock facilities is one of Carson and Company's greatest strengths as we are able to source the highest quality product available on the coasts. 


The Journey from the Waters to the Table

Carson and Company buys fresh and frozen, wild caught shrimp from local shrimpers at ports along the Gulf Coast as well as on the Atlantic. Each day when these shrimpers reach the docks, the shrimp are unloaded and then loaded directly onto our refrigerated trucks.

Our fleet of 18-wheeler Peterbilt trucks and 22 refrigerated trailers transport our shrimp from the docks to our processing plant in Bon Secour, Alabama. At our processing plant, we implement our state-of-the-art equipment to wash, size, de-head, remove hulls and de-vein the shrimp. Our workers then carefully wash and pack each box to make sure we deliver a clean pack. The packs are blast frozen and then cased out the following day. Finally, the product is shipped to our own leading-edge cold storage facility.

Carson and Company is constantly growing and evolving. We rise to the challenges and demands of the ever-changing shrimp industry. Our investment in state-of-the-art technology is just one reason behind the quality and consistency of our shrimp. We deliver a consistent product count made possible by our in-house Quality Assurance Team that is equal to none!

When our fresh caught shrimp is delivered for processing, our Quality Assurance team assess the shrimp product for top quality. Our experienced employees carefully grade and hand pack every Captain Carson shrimp. As a result, we are able to guarantee consistent quality, weight and counts. Each box of Carson & Company brand shrimp has the declared count specified on the outside of the pack. We strive to achieve counts that exceed the industry standard and fall in the middle of the count bracket.

We also use top quality phosphates, well below the maximum allowed, to ensure top quality appearance and flavor. As with all wild caught shrimp, no growth hormones or antibiotics are present.


We Stand Behind Our Product

Carson and Company adheres to the U.S. Department of Commerce (USDC) standards for Quality Assurance. We also implement and follow a rigorous sanitation process as well as the FDA’s Hazard Analysis and Critical Control Point (HACCP) program for seafood safety. In addition to the compliance with USDC and HACCP, we also hire an outside independent inspection company to do an annual inspection/audit of our facilities. This ensures that we can continue to guarantee top quality processing and product. We are also compatible with the Gulf Seafood Trace program, which allows buyers and consumers to know where their product was caught and processed - telling a story of the shrimp.
